Most of the fish in this family contain highly poisonous neurotoxins in their skin and organs. Yet the flesh, when prepared properly is delicious. In Japan, fugu may be served only by licensed chefs, although amateurs occasionally make the attempt. Between 1996 and 2005, there were 315 cases of fugu poisoning in Japan, 31 of which were fatal.
